Modica is a small, pleasant town located in the southernmost corner of Sicily, in the province of Ragusa, not far from the Greco-Roman jewel that is Syracuse. Declared a UNESCO World Heritage Site for its historic center rich in Baroque architecture, Modica is famous throughout Italy for its artisanal chocolate, the result of a tradition dating back to the 16th century. Cocoa processing was introduced to Sicily during the Spanish rule, using a cold processing technique learned from the Aztecs. It is still used today in Modica’s confectioneries....
